A narrator says, WHOSE KITCHEN ARE WE GOING TO TODAY?

A door is opened by a little girl. She has black hair tied back from her face and wears a peach shirt.

The girl says, HELLO, MY NAME IS CHOEKYI. WELCOME TO MY HOUSE. COME IN. THIS IS MY MUM, YANGCHEN.

Yangchen waves. She has black hair wears a green top.

Yangchen says, HELLO.

The narrator says, HI, MUM.

Choekyi says, AND THIS IS MY KITCHEN. TODAY, I'M GOING TO BE MAKING SPINACH MOMOS, BECAUSE I LOVE TO EAT THEM.

The narrator says, CHOEKYI'S MUM HAS SHOWN HER A VERY SPECIAL WAY TO MAKE SPINACH MOMOS, WHICH TASTE DELICIOUS. CHOEKYI'S FAMILY ARE TIBETAN AND THEY COME FROM TIBET.

The narrator says, TIBET IS A SELF-RULING REGION OF CHINA THAT HAS MANY BEAUTIFUL LAKES, GRASSLANDS AND SNOWY MOUNTAINS. MOUNT EVEREST IS THE HIGHEST MOUNTAIN IN THE WORLD AND CAN BE FOUND ON THE EDGE OF TIBET.

Food is shown.

The narrator says, IN THE TIBETAN COUNTRYSIDE, PEOPLE EAT A LOT OF BARLEY, CHEESE, SOUPS, NOODLES AND DUMPLINGS.

Dumplings steam over a bit black pot.

The narrator says, MOMOS ARE A TYPE OF STEAMED DUMPLING TRADITIONALLY EATEN IN TIBET. THIS IS WHAT CHOEKYI IS MAKING TODAY.

Choekyi washes her hands.

The narrator says, CHOEKYI HAS WASHED HER HANDS, PUT ON HER APRON AND SHE'S READY TO COOK.

Choekyi wears a navy-blue apron with white polka dots. She is in a kitchen.

Choekyi says, I'M GOING TO BE MAKING SPINACH MOMOS FOR MY FRIENDS.

The narrator says, AND SHE'S INVITED DANIEL, RACHAEL, AND MARIA TO TASTE ONE OF THE MAIN INGREDIENTS BEFORE THEY COME ROUND FOR A VERY SPECIAL TIBETAN MEAL LATER.
WHAT'S THAT?

Rachael has dark brown braided hair tied up with a red bow. She opens a box with a piece of mushroom in it. She sniffs it.

Maria has brown hair and wears a white shirt. She looks at a mushroom.

Maria says, IT'S... BROWN?

Daniel has curly brown hair and wears a blue hoodie. He squeezes a mushroom.

Daniel says, IT'S SOFT.

Rachael says, IT FEELS SLIMY.

Maria says, IT SMELLS-- IT SMELLS YUCKY.

The narrator says, OH.

Daniel says, I THINK IT'S CHOCOLATE AND BREAD.

The narrator says, IT'S NOT CHOCOLATE OR BREAD. WHAT'S IT TASTE LIKE?

Daniel says, I DON'T LIKE IT.

The narrator says, OH, DEAR.

Rachael says, I DON'T REALLY LIKE IT, BUT I THINK IT'S MUSHROOM.

The narrator says, IT'S COOKED MUSHROOM.

Maria makes a face and says, IT'S YUCKY.

Daniel says, REALLY DON'T WANT TO HAVE ANY MORE.

The narrator says, IT DOESN'T LOOK LIKE ANYONE LIKES IT. LET'S SEE IF CHOEKYI CAN CHANGE THEIR MINDS, BECAUSE MUSHROOMS ARE ONE OF THE MAIN INGREDIENTS IN HER RECIPE. AS WELL AS MUSHROOMS, YOU'LL NEED COOKED SPINACH, GRATED CHEESE, VEGETABLE OIL, PLAIN FLOUR, WATER AND SALT.

Choekyi says, FIRST, I'M GOING TO GET THE FLOUR AND THEN I PUT A LITTLE HOLE AND ADD THE WATER.

Choekyi makes an indentation in a bowl of flour and pours in water.

Choekyi says, AND SQUISH THEM TOGETHER WITH MY HANDS.

The narrator asks, WHAT ARE YOU MAKING THERE, CHOEKYI?

Choekyi says, I AM MAKING THE DOUGH.

The narrator says, THAT'S MORE WATER AND FLOUR GOING IN.

Choekyi says, IT FEELS VERY SQUISHY. IT'S LIKE SOME SLIME. MY MUM TAUGHT ME HOW TO MAKE THIS RECIPE. MY FAVOURITE FOOD IS MOMOS, SO THAT'S WHY I'M MAKING IT TODAY.

The narrator says, FLOUR THE WORKTOP, PUSH AND PULL THE DOUGH SOME MORE AND THEN PUT THE DOUGH BACK INTO THE BOWL. COVER THE BOWL WITH A CLEAN TEA TOWEL AND PUT IT TO ONE SIDE FOR LATER. THEN, WASH THOSE STICKY FINGERS.

Choekyi washes her hands.

Choekyi says, NOW, I'M GONNA MAKE THE FILLINGS.

The narrator says, ASK A GROWN-UP TO COOK AND COOL SOME SPINACH FOR YOU.

Choekyi says, I'M GOING TO USE TWO FORKS TO PULL THE SPINACH INTO SMALL PIECES.

Choekyi puts spinach in a bowl with grated cheese.

The narrator says, ADD THE SPINACH TO GRATED CHEESE.

Choekyi says, NOW, IT'S TIME FOR MY VERY SPECIAL INGREDIENT.

The narrator says, AND YOU KNOW WHAT THAT IS, DON'T YOU? IT'S MUSHROOMS.

The narrator says, MUSHROOMS ARE A TYPE OF FUNGUS THAT GROW VERY FAST. THERE ARE MANY DIFFERENT TYPES OF MUSHROOMS THAT GROW IN ALL SORTS OF PLACES. IT'S IMPORTANT NOT TO PICK AND EAT THEM, BECAUSE NOT ALL MUSHROOMS ARE SAFE TO EAT AND SOME CAN EVEN BE POISONOUS. MUSHROOMS CAN GROW VERY LARGE, AND ONE TYPE OF MUSHROOM HAS BEEN FOUND TO BE BIGGER THAN A BLUE WHALE. THERE ARE EVEN MUSHROOMS THAT GLOW IN THE DARK AND PEOPLE HAVE BEEN KNOWN TO USE THESE TO HELP THEM SEE THEIR WAY AROUND.

Choekyi says, I'M GOING TO GET THE MUSHROOMS AND I'M GOING TO SQUISH THEM TOGETHER TO SMALL PIECES.

Choekyi breaks cremini mushrooms into small pieces.

The narrator asks, HAVE YOU BEEN TO TIBET BEFORE, CHOEKYI?

Choekyi says, I HAVE BEEN TO TIBET BEFORE. THERE WERE LIKE SOME DUSTY ROADS AND THERE WAS LOTS OF PEOPLE. AND THERE WERE LOTS OF TRADITIONAL HOUSES. NOW I GET THE BOWL OF CHEESE AND SPINACH AND THEN I ADD THE MUSHROOMS IN IT.

Choekyi puts the mushrooms in the bowl.

The narrator says, ADD SOME VEGETABLE OIL AND A PINCH OF SALT.

Choekyi says, AND THEN I MIX THEM TOGETHER.

The narrator says, CHOEKYI IS USING HER HANDS, BUT YOU CAN USE A SPOON IF YOU WANT TO.

Choekyi says, AND THEN, I'M GOING TO OIL THE STEAMER.

Choekyi uses a brush to spread oil in a metal steamer.

The narrator says, THAT'LL STOP THE MOMOS FROM STICKING.

Choekyi says, NOW, I'M GOING TO FLOUR THE SURFACE AND THEN I'M GOING TO PUT THE DOUGH ON.

Choekyi sprinkles flour over a countertop. She puts a ball of dough on the counter.

The narrator says, SPLIT THE DOUGH IN HALF AND ROLL ONE HALF INTO A SAUSAGE SHAPE.
Choekyi uses her hands to roll the dough.

The narrator says, PINCH OFF SMALL PIECES OF THE DOUGH. WHAT'S NEXT?

Choekyi says, NOW, I TAKE ONE AND THEN I PRESS IT.

Choekyi rolls a piece of dough between her hands.

The narrator says, THEN ROLL IT INTO A BALL AND FLATTEN IT WITH YOUR HANDS. DO THE SAME WITH THE REST OF THE DOUGH.

Choekyi says, TAKE ONE AND ROLL INTO A NICE FLAT CIRCLE.

Choekyi uses a rolling pin.

The narrator says, AH, THAT'S NICE AND ROUND, CHOEKYI.

Choekyi says, NOW, I'M GOING TO GET A DOUGH.

The narrator says, SPOON SOME OF YOUR FILLING INTO THE MIDDLE AND PINCH THE EDGES TOGETHER, JUST LIKE THIS.

Choekyi pinches the dumpling closed over the filling.

The narrator says, CHOEKYI MAKES IT LOOK SO EASY. SQUEEZE THE END AND PLACE IT INTO AN OILED STEAMER. THEN, MAKE THE REST IN EXACTLY THE SAME WAY.

Choekyi fills more dumplings.

Choekyi says, IT TAKES A BIT OF PRACTICE, BUT I GOT BETTER AND BETTER.

The narrator says, YOU HAVE GOT BETTER, THEY LOOK AMAZING. NOW, ASK A GROWN-UP TO HELP YOU.

Choekyi says, MUM, CAN YOU PLEASE PUT THEM INTO STEAMER?

Yangchen stacks the steamer over an oven.

The narrator says, CHOEKYI'S MUM YANGCHEN IS USING THE STEAMER TO COOK THE MOMOS IN A TRADITIONAL WAY, BUT YOU CAN COOK THEM IN A NORMAL OVEN.

Choekyi’s hands make momos on the counter.

The narrator says, IF YOU'D LIKE TO MAKE CHOEKYI'S TIBETAN SPINACH MOMOS AT HOME, TAKE SOME PLAIN FLOUR AND MAKE A HOLE IN THE MIDDLE. ADD SOME WATER AND MIX IT TOGETHER WITH YOUR HANDS. ADD MORE WATER AND FLOUR IF YOU NEED TO AND KEEP MIXING UNTIL YOU'VE MADE A DOUGH. SPRINKLE FLOUR ONTO YOUR WORKTOP AND PUSH AND PULL THE DOUGH SOME MORE, AND THEN PUT THE DOUGH BACK INTO THE BOWL. COVER THE BOWL WITH A CLEAN TEA TOWEL AND PUT IT TO ONE SIDE. TEAR COOKED SPINACH INTO SMALL PIECES AND ADD IT TO ANOTHER BOWL OF GRATED CHEESE. TEAR THE MUSHROOMS INTO SMALL PIECES TOO, THEN ADD THEM TO THE BOWL AS WELL. ADD SOME VEGETABLE OIL AND A PINCH OF SALT TO THE MIXTURE AND GIVE IT A GOOD MIX. SPRINKLE FLOUR ONTO THE WORKTOP AND SPLIT THE DOUGH IN HALF. THEN, USE YOUR HANDS TO ROLL ONE HALF INTO A SAUSAGE SHAPE. PINCH OFF PIECES OF THE DOUGH THAT ARE ABOUT THE SAME SIZE AND ROLL EACH PIECE INTO A BALL.

Balls of dough fill the counter.

The narrator says, THEN FLATTEN IT. DO THE SAME WITH THE OTHER HALF OF YOUR DOUGH, ROLLING EACH PIECE OUT INTO A THIN CIRCLE.

Circles of dough cover the counter.

The narrator says, TO STEAM THE MOMOS IN AN OVEN, LIGHTLY OIL AN OVENPROOF DISH. SCRUNCH UP FOUR PIECES OF FOIL INTO BALLS, PLACE THEM INTO A LARGE ROASTING TRAY, AND PLACE THE OILED DISH ON TOP.

Choekyi’s hands add filling to the dumplings.

The narrator says, NOW, FILL EACH CIRCLE OF DOUGH WITH YOUR VEGETABLE AND CHEESE MIXTURE. PINCH THE EDGES OF THE DOUGH TOGETHER, LIKE THIS, TO SEAL THEM AND THEN PUT THEM IN THE DISH. DO THE SAME WITH ALL THE DOUGH AND FILLING, UNTIL IT'S ALL USED UP.

Dumplings fill a baking dish.

The narrator says, ASK A GROWN-UP TO POUR WATER INTO THE BOTTOM OF THE ROASTING TRAY, COVER IT WITH FOIL AND PUT IT IN THE OVEN FOR YOU.

Choekyi spreads a tablecloth and sets a table.

The narrator says, NOW, THERE'S JUST ENOUGH TIME FOR CHOEKYI TO GET THE TABLE READY FOR HER VERY SPECIAL TIBETAN MEAL.

Choekyi holds a white cloth.

Choekyi says, THIS IS A KHATA AND IT'S USED TO WELCOME PEOPLE. I AM GOING TO WELCOME MY FRIENDS WITH THEM.

[Doorbell ringing]

The narrator says, YOUR FRIENDS ARE HERE. WELL DONE, CHOEKYI, YOUR TIBETAN-THEMED TABLE LOOKS FABULOUS.

Choekyi opens a door. Daniel, Maria, and Rachael are there.

The children say, HI, CHOEKYI.

Choekyi says, HELLO, COME IN.

The narrator says, NOW EVERYONE'S WASHED THEIR HANDS AND THEY'RE READY TO EAT.

All the children say, WOW.

Rachael says, IT LOOKS AMAZING.

Daniel says, YOU'VE DONE A LOT OF EFFORT ON THAT.

The narrator says, YOU CERTAINLY HAVE, CHOEKYI.

Choekyi puts white cloths around the children’s necks.

The narrator says, WHAT A LOVELY WAY TO WELCOME YOUR FRIENDS.

Rachael says, THANK YOU, CHOEKYI. IT LOOKS BEAUTIFUL.

Daniel says, THANK YOU, LOOKS STYLISH.

Rachael asks, CHOEKYI, WHY DO WE HAVE TO SIT ON THE FLOOR?

Choekyi says, BECAUSE THAT'S HOW TIBETAN NORMALLY DO WHEN THEY EAT.

The narrator says, THAT'S RIGHT. SOME PEOPLE IN TIBET DO SIT ON THE FLOOR TO EAT.

Choekyi asks, WHAT DO YOU THINK ABOUT MY TABLE?

Maria says, I THINK IT'S REALLY NICE.

Rachael touches the tablecloth.

Rachael says, I LIKE THE BLUE, BECAUSE IT REMINDS ME OF THE SEA.

Daniel says, I THINK IT REALLY LOOKS STYLISH, BECAUSE OF THE FLOWERS.

Yangchen carries a platter in.

The narrator says, AND HERE'S MUM WITH THE COOKED AND COOLED SPINACH MOMOS.

Yangchen puts momos on plates in front of each child.

The narrator says, WELL DONE, CHOEKYI. YOUR SPINACH MOMOS LOOK WONDERFUL.

Choekyi says, WHY DON'T YOU TRY IT?

The narrator says, EARLIER TODAY, CHOEKYI'S FRIENDS REALLY DIDN'T LIKE THE TASTE OR SMELL OF MUSHROOMS. DO YOU THINK THEY'LL CHANGE THEIR MINDS WHEN THEY TASTE THE MOMOS?

Rachael and Maria eat.

The narrator says, THEY LOOK LIKE THEY'RE ENJOYING THEM.

Daniel says, I THINK IT TASTES YUMMY.

Rachael says, IT REALLY TASTES NICE.

The narrator says, MM, TASTY.

Choekyi asks, WHAT DO YOU THINK THE SPECIAL INGREDIENT IS?

They all say, MUSHROOM.

Choekyi says, YEAH, YOU'RE RIGHT.

The narrator says, GOOD GUESS, EVERYONE, IT IS MUSHROOM.

Choekyi says, DO YOU LIKE THE TASTE OF MUSHROOM IN MY SPINACH MOMOS?

Rachael says, IT TASTES BETTER THAN BEFORE.

Daniel says, I HOPE I HAVE SOME MORE.

The narrator says, WELL DONE, CHOEKYI. IT LOOKS LIKE EVERYONE DOES LIKE THE TASTE OF MUSHROOM AFTER ALL.

Choekyi says, THANK YOU FOR COMING TO MY WORLD KITCHEN.
