The red, yellow, and green striped flag of Guinea flutters beside Ryan.
Ryan says, THE GUINEAN FLAG IS RED, YELLOW AND GREEN. RED SYMBOLIZES SACRIFICE AND LABOR. YELLOW REPRESENTS THE MINERAL WEALTH OF THE COUNTRY. THE TROPICAL SUN AND JUSTICE. GREEN REMINDS US THAT THE PEOPLE LIVE OFF AGRICULTURE AND THE LAND.

Ryan narrates, YOU'LL NEED OKRA, SOME WHITE EGGPLANTS, TYPICAL OF GUINEA, PURPLE EGGPLANT, ONIONS, DRIED OKRAS, FRESH PEPPERS. THEN YOU WILL NEED FRESH CRAB, FRESH FISH, SMOKED FISH CALLED BONGA CUBED BEEF, DRY SHRIMPS, POWDERED SHRIMPS AND FINALLY, SOME FENNEL TO GO WITH IT. SOME PEOPLE USE A BLENDER TO CHOP EVERYTHING, BUT THE REAL WAY TO DO IT IS TO USE A MORTAR AND A PESTLE.
Ryan uses the large mortar and pestle. The pestle reaches Ryan’s chest, and the mortar is bucket-shaped.
[Tapping, scraping]
Sunny appears and sniffs. Ryan stirs the ingredients in a pot. Ryan smiles and gives a thumbs-up.

Ryan says, ONCE EVERYTHING IS CHOPPED, YOU GOT TO LET IT SIMMER TOGETHER SO THE INGREDIENTS HAVE TIME TO BOOST EACH OTHER UP.
Ryan samples his Gombo sauce.
Ryan says, MM. STILL MY FAVORITE. FOREVER AND ALWAYS.

LIKE THE NIGHT BEFORE, YOU GO IN THE MIRROR, AS YOU GO THROUGH YOUR LINES AND YOU GO THROUGH THE LINES, YOU GO OVER AND OVER AND OVER AND OVER AGAIN UNTIL IT BECOMES LIKE MUSCLE MEMORY.
