In the Skills Space, Brody stands at the work table cleaning a wrench. Brody wears a dark blue long-sleeved shirt, beige pants and brown work boots. Smoke billows out from behind the workbench wall.
[Akeylah coughing]
Akeylah walks out from behind the wall wearing a white apron over her pink long-sleeved shirt, blue jeans and brown boots. She waves a baking tray at the smoke.
[Akeylah coughing]
Brody looks unimpressed. Akeylah sets the baking tray on the workbench and joins Brody at the table. She leans on the table and rests her chin on her hand.
Brody says, LET ME GUESS. ANOTHER BURNT BATCH OF BROWNIES?
Akeylah says, YEP.
ALL I WANT IS A SWEET
CHOCOLATEY TREAT,
BUT EVERY TIME I TRY TO MAKE
MY OWN, WELL.
Akeylah glances toward the smoke.
Brody says, DON'T GIVE UP YET.
THERE'S GOTTA BE SOMEONE
WHO CAN HELP.
LET ME CHECK MY CONTACTS.
Brody pulls a blue container out from under the table.
He says, ALL RIGHT. LET'S SEE WHAT WE GOT.
Brody pulls a card out of the container.
He says, A WELDER THAT MAKES WAFFLE IRONS? NO.
Brody tosses the card over his shoulder and pulls out another.
He says, A GOLDSMITH THAT MAKES CANDY RINGS? NAH.
Brody tosses the card and pulls out another.
He says, OH, LOOK AT THIS. A PASTRY CHEF THAT MAKES CHOCOLATE BARS!
Akeylah says, WAIT, DID YOU SAY CHOCOLATE BARS?
Brody says, YEP. CHEF TAMMY IS A RED-SEALED PASTRY CHEF WHO HAS HER OWN CHOCOLATE SHOP.
In a kitchen, Baker Patisserie Chef Tammy Maki places a tray of brownies on a table. Tammy wears her long black hair in a loose bun and a black short-sleeved chef’s coat.
Brody says, AKEYLAH, THIS COULD BE YOUR

Title: Trading Skills.
[Gentle, bright music plays]
On a sunny day, Akeylah walks down a city sidewalk wearing a grey zipper sweater.
Akeylah narrates, I HAD TO KNOW THE SWEET SECRETS
OF MAKING CHOCOLATE,
SO I PAID CHEF TAMMY A VISIT AT
HER CHOCOLATE SHOP,
RAVEN RISING IN SUDBURY,
ONTARIO,
WHERE HANDCRAFTED CREATIONS
INSPIRED
BY HER INDIGENOUS ROOTS ARE ON
DISPLAY.
In the Raven Rising chocolate shop, shelves display chocolate bars with colourful, detailed designs. Akeylah walks up to Chef Tammy at the counter.
Akeylah says, HI, CHEF TAMMY!
Chef Tammy says, HI, AKEYLAH.
WELCOME TO RAVEN RISING.
She shakes Akeylah’s hand.
Akeylah says, THESE CHOCOLATES ARE
EXQUISITE.
IS THIS REALLY WHAT YOU DO
AS A TRADE?
Chef Tammy says, WELL, I'M A BAKER-PATISSIER, SO
MAKING TREATS IS MY TRADE.
Akeylah says, SOUNDS LIKE THE PERFECT
JOB TO ME.
MIND IF I SAMPLE THE GOODS?
Chef Tammy says, I HAVE A BETTER IDEA.
HOW ABOUT IF WE GO
IN THE BACK
AND WE MAKE OUR OWN CHOCOLATE
FROM SCRATCH?
Akeylah says, OF COURSE!
She follows Chef Tammy into the back of the shop. In the back, Akeylah wears a black chef’s coat matching Chef Tammy’s.
Chef Tammy says, SO NOW THAT WE'RE ALL
SUITED UP,
I'M GOING TO INTRODUCE YOU
TO MY WHEELIE MACHINE.
Chef Tammy takes a cover off a wheelie machine.
Akeylah asks, WHAT DOES THIS MACHINE DO?
Chef Tammy says, WELL, THIS MACHINE HELPS ME
TEMPER MY CHOCOLATE,
BUT I HAVE TO PUT THE
WHEEL ON FIRST.
She grabs a large white disc.
Akeylah says, LET'S GET THE WHEEL ON
THE WHEELIE MACHINE!
Chef Tammy puts the wheel in the wheelie machine. She stands it upright in the chocolate inside the machine.
Chef Tammy asks, WOULD YOU LIKE TO
START THE WHEEL?
Akeylah says, SURE!
She starts the machine, and the wheel starts turning. The wheel mixes the cholate to a smooth and shiny consistency.
[Whirring]
Akeylah says, OOH!
IT'S SO SMOOTH.
I COULD WATCH THIS ALL DAY.
[Chef Tammy laughing]
Chef Tammy says, SO THIS WHEELIE KEEPS MY
CHOCOLATE MOVING,
SO I DON'T HAVE TO STAND HERE
ALL DAY AND KEEP STIRRING IT.
Akeylah says, OH.
Chef Tammy explains, BECAUSE THERE'S DIFFERENT
TEMPERATURES
AT DIFFERENT LEVELS.
IT'S COLDER ON TOP THAN IT IS AT
THE BOTTOM.
SO THIS WHEEL HELPS MAKE IT SO
THAT IT'S THE SAME TEMPERATURE
ALL THE WAY THROUGH, BUT IT'S
NOT TEMPERED YET.
SO I NEED TO PUT MORE
CHOCOLATE IN FIRST.
Akeylah says, MORE CHOCOLATE?!
Chef Tammy says, ALWAYS MORE CHOCOLATE.
She scoops chocolate chips out of a large container and adds them to the chocolate in the wheelie machine. Akeylah watches the chocolate chips mix with the melted chocolate.
Akeylah says, IT'S LIKE A CHOCOLATE
FERRIS WHEEL.
The chocolate chips start to melt.
Akeylah asks, WHAT IS TEMPERING CHOCOLATE?
Chef Tammy says, SO WE MELT IT TO A CERTAIN
TEMPERATURE,
AND THEN I ADD CHOCOLATE,
AND I'M GOING TO BRING IT DOWN
TO THIS TEMPERATURE.
The temperature on the machine reads 35.7.
Chef Tammy says, IT HELPS TO FORM THE
BETA-5 CRYSTAL.
SO IT'S KIND OF
SCIENCEY, RIGHT?
BUT IT'S REALLY COOL.
SO A NICE TEMPERED
CHOCOLATE IS
GOING TO SNAP WHEN IT BREAKS,
RIGHT, WHEN IT'S SET.
BECAUSE I SELL IT AND IT
GOES ALL OVER THE PLACE,
I WANT TO MAKE SURE THAT MY
CHOCOLATE IS STABLE.

Title: Trading Skills.
[Cheerful music plays]
Akeylah narrates, NEXT, WE TOOK A LOAD OFF TO CHAT
AND ENJOY A COUPLE OF
CHEF'S UNIQUE TREATS.
Akeylah and Chef Tammy sit at the front counter of the chocolate shop with two chocolate treats.
Akeylah says, THESE LOOK YUMMY.
WHAT ARE THEY?
Chef Tammy says, WELL, THESE ARE ACTUALLY
CALLED BONBONS.
THAT IS MADE FROM MANOOMIN,
WHICH IS THE OJIBWE WORD
FOR WILD RICE.
AND THEN THIS ONE IS MADE FROM
ELDERFLOWER AND ELDERBERRY.
Akeylah says, AND I HAVE TO KNOW, HOW DID
YOU BECOME A PASTRY CHEF?
Chef Tammy says, WHEN I WAS VERY YOUNG,
I USED TO ENJOY HELPING MY
MOM IN THE KITCHEN.
AND WHEN I WAS GROWING UP, I
HAD SOME JOBS IN KITCHENS,
AND I MADE EVERYBODY'S
WEDDING CAKES
AND BIRTHDAY CAKES AND
ANNIVERSARY CAKES.
AND THEN DECIDED WHEN I WAS
IN MY 40S THAT I WANTED TO
ACTUALLY HAVE FUN AND ENJOY
WHAT I WAS DOING.
SO I WENT BACK TO SCHOOL, AND I
TOOK BAKING AND PASTRY ARTS.
Akeylah asks, WHAT IS THE MOST EXCITING THING
ABOUT BEING A PASTRY CHEF?
Chef Tammy says, I LIKE EVERYTHING THAT I
GET TO CREATE.
IF SOMETHING COMES INTO MY
MIND, I CAN CREATE IT.
I JUST LOVE EVERYTHING
THAT I DO.
AND I LOVE TO FEED PEOPLE.
I LIKE TO MAKE PEOPLE HAPPY.
Akeylah says, YOU KNOW WHAT WOULD MAKE
ME HAPPY?
A BITE OF THIS BONBON.
Akeylah bites into the elderflower and elderberry bonbon.
[Chef Tammy chuckling]
Akeylah smiles.
She says, TRÉS BONBON.
[Akeylah and Chef Tammy laughing]

Title: Trading Skills.
[Upbeat music plays]
In a kitchen, Akeylah walks up to a table with a blond-haired girl wearing glasses. Akeylah and the blond-haired girl wear black chef’s coats and black disposable gloves. They put chocolate bar decorations on the counter.
Akeylah narrates, IT WAS TIME TO MAKE A BAR OF
MY OWN,
AND I HAD CHEF TAMMY'S
GRANDDAUGHTER ATHENA
AS MY CO-CHOCOLATEER.
Akeylah and the blond-haired girl, Athena, high-five. Chef Tammy pours melted chocolate into a large piping bag.
Chef Tammy says, I'M GOING TO SHOW YOU HOW TO
MEASURE OUT YOUR MOLDS.
EACH MOLD IS GOING TO
GET 100 GRAMS.
SO YOU'RE GOING TO
MAKE A BIG BAR.
Text reads, 100 grams equals 3.5 ounces.
Chef Tammy says, YOU'RE GOING TO PIPE
INTO THE CORNERS
AND ALL THE WAY AROUND THE
OUTSIDE OF THE MOLD FIRST.
She pipes chocolate along the edges of a chocolate bar mould tray on a kitchen scale.
Chef Tammy says, AND YOU'RE GOING TO
PIPE IN THERE.
She covers the rest of the mould with chocolate.
Chef Tammy says, AND WHEN YOU START GETTING
CLOSE TO 100,
YOU'RE GOING TO GO A LITTLE
BIT SLOWER.
She slowly pipes more chocolate into the mould. She fills two other moulds in the tray.
Chef Tammy says, IN THERE.
Akeylah says, YOU'RE REALLY FAST!
Chef Tammy says, BEFORE IT STARTS TO SET
TOO MUCH,
I'M GOING TO ADD JUST A
COUPLE OF RANDOM THINGS.
ROSEBUDS THAT I PICKED.
Chef Tammy carefully places a rosebud on the hardening chocolate.
She says, A LITTLE BIT OF SUGAR.
She sprinkles rainbow-coloured sugar on the chocolate.
Chef Tammy says, AND THEN THIS IS PROBABLY ONE OF
MY FAVOURITE THINGS TO ADD.
GOLD FLAKES.
She shakes gold flakes onto the chocolate.
Together, Akeylah and Athena say, GOLDEN FLAKES!
[Chef Tammy laughing]
Chef Tammy says, SO NOW I'M JUST GOING TO
LEAVE IT OVER HERE
TO SET UP FOR A
LITTLE BIT.
She sets her chocolate aside. Later in the kitchen, Akeylah and Athena stand at the table with different moulds and melted chocolate in piping bags.
Chef Tammy says, OKAY, HOW MUCH ARE YOU GOING TO
PIPE IN THERE?
Akeylah and Athena say,100 GRAMS.
Chef Tammy says, ABSOLUTELY, 100 GRAMS EACH.
Akeylah carefully pipes chocolate along the edge of her mould.
She quietly says, OKAY.
Chef Tammy says, YEAH, AROUND THE SIDES FIRST.
Akeylah says, I'M FOCUSED.
She pipes chocolate across the rest of her mould.
Chef Tammy says, OKAY, KEEP GOING.
Akeylah tracks the number of grams on a kitchen scale.
Akeylah says, 100!
Beside her, Chef Tammy helps Athena pipe chocolate into her mould.
Akeylah asks, HOW YOU DOING OVER
THERE, ATHENA?
Athena says, WE'RE TRYING!
Akeylah holds up her piping bag.
She says, I'VE DONE 100% OF MY PIPING.
Chef Tammy says, AWESOME WORK.
Akeylah and Athena add decorations to their setting chocolate. Akeylah adds gold flakes, and Athena adds sprinkles.
Akeylah says, THEY'RE SO SHINY.
Athena covers her bars with sprinkles.
Akeylah says, HEARTS, PLEASE!
Chef Tammy holds out a container of heart-shaped sprinkles. Akeylah scoops a spoonful of hearts out of the container and spreads them across her chocolate bars.
Akeylah says, HEARTS FOR MY LOVE,
CANDY BAR.
She gently taps the chocolate with her spoon.
Akeylah says, OKAY.
DONE WITH MY INCLUSIONS.
Athena says, ME TOO.
Chef Tammy pulls Akeylah and Athena’s moulds aside.
She says, THESE ARE SO GOOD,
YOU GUYS.
I'M GOING TO HAVE
TO HIRE YOU.
Athena says, YOU CAN'T HIRE US, WE'RE
TOO YOUNG.
[Chef Tammy chuckling]

Title: Trading Skills.
[Gentle music plays]
In Raven Rising, Akeylah says, TODAY, WE'VE LEARNED A LOT.
A BIT OF MATH AND SCIENCE HERE,
A BIT OF ART THERE.
THE ONLY THING THAT'S MISSING IS
HISTORY.
LET'S SEE WHAT WE CAN LEARN
ABOUT THE PASTRY CHEFS
OF THE PAST AND HOW THEY'VE
SHAPED THE TREATS OF TODAY.
In a black-and-white video, Brody works in a kitchen wearing an apron and beret. He pretends to mix ingredients in a bowl with his hands.
Akeylah narrates, THE FIRST PUFF PASTRY MAY HAVE
BEEN A MISTAKE IN 1645
BY A FRENCH APPRENTICE TRYING TO
BAKE A CAKE.
As the French apprentice, Brody frowns.
Akeylah narrates, INSTEAD, SOMETHING MORE DELICATE
WAS BORN.
Brody takes a croissant out of the mixing bowl and smiles.
Akeylah narrates, IN THE 1800S, THE FIRST FRENCH
PASTRY MASTERS
OPENED PATISSERIES,
SHOPS WHERE FOLKS WOULD FLOCK TO
EXPERIENCE SWEET CREATIONS.
On a street, Brody hands out pastries. In a factory, he squeezes dollops of chocolate across a baking tray with a piping bag.
Akeylah narrates, IN THE EARLY 20TH CENTURY, SMALL
BAKERIES
AND CHOCOLATE SHOPS BECAME BIG
BUSINESSES.
LAURA SECORD OPENED AS A SMALL
CHOCOLATE SHOP IN TORONTO
AND SOON OPENED BIG FACTORIES
ACROSS THE COUNTRY.
[Cheerful music plays]
In a chocolate store, Brody takes off his beret.
Akeylah narrates, NOWADAYS, THE DEMAND FOR LOCAL
INGREDIENTS
FROM INDEPENDENT SHOPS
MAKE IT POSSIBLE FOR PATISSIERS
TO EXPERIMENT,
JUST LIKE THE FIRST ONES DID.
Brody puts on a chef’s hat and mixes ingredients in a bowl with a wooden spoon. Brody puts the bowl and spoon down and gives two thumbs up.
[Upbeat music plays]
In the kitchen, Akeylah narrates, WHILE WE WAITED FOR OUR BARS
TO SET,
I GOT A MUCH-NEEDED LESSON IN
BROWNIE BAKING.
Akeylah walks up to the table with Chef Tammy. Baking ingredients cover the table.
Chef Tammy says, SO ONE OF THE MOST IMPORTANT
THINGS THAT WE DO IN A KITCHEN
IS SOMETHING CALLED
MISE EN PLACE.
Akeylah says, MISE EN WHAT?
[Chef Tammy laughing]
Chef Tammy says, MISE EN PLACE.
A FANCY FRENCH WORD FOR
EVERYTHING IN ITS PLACE.
SO WHAT IT DOES IS IT ENSURES
THAT WE HAVE ENOUGH
OF EVERY INGREDIENT
BEFORE WE START BAKING.
Chef Tammy uses a kitchen scale.
She says, SO THAT IS A LOT
OF SUGAR.
She pours sugar into a mixing bowl on the scale.
Chef Tammy says, SALT.
SO THE SALT'S RIGHT
AT THE END.
Akeylah grabs a container of salt.
She says, GREY SEA SALT.
Chef Tammy says, TWO PINCHES.
She scoops salt into the mixing bowl.
Chef Tammy says, SO THEN WE'RE GOING
TO DO EGGS.
She cracks an egg into a plastic container on the scale. In a timelapse, Chef Tammy fills the container with cracked eggs.
[Whirring]
Akeylah cracks an egg into a container.
Chef Tammy says, MY RECIPE CALLS FOR 340 GRAMS
OF A.P. FLOUR
AND 8 GRAMS OF
BAKING POWDER.
Chef Tammy weighs flour and baking powder. Text reads, 340 grams equals 12 ounces. 8 grams equals 0.28 ounces.
Akeylah narrates, AND OF COURSE, COCOA POWDER.
She weighs cocoa powder.
Chef Tammy says, NOW I'M GOING TO START
WITH THE BUTTER.
She scraps butter into an electric stand mixer mixing bowl.
Chef Tammy says, THEN YOU CAN ADD ALL OF THE
SUGAR AND THE SALT.
She adds the sugar and salt.
Chef Tammy says, LIFT THE BOWL UP AND
YOU START SLOW.
Akeylah nods. Chef Tammy starts the mixer.
Chef Tammy says, IF YOU START THE MIXER FAST,
IT'S GOING TO GO...
[Chef Tammy and Akeylah imitating an explosion]
[Mixer whirring]
Chef Tammy and Akeylah look at the ingredients in the bowl.
Chef Tammy says, SO YOU SEE HOW BRIGHT
YELLOW IT IS?
AS YOU INCORPORATE AIR
INTO IT,
IT'S GOING TO
GET LIGHTER.
The bright yellow ingredients turn pale yellow.
Chef Tammy says, SEE IT'S TURNING COLOUR.
She slows down the speed of the mixer.
Chef Tammy says, THIS IS WHEN YOU'RE GOING TO
INCORPORATE THE DRY
AND THE EGGS TOGETHER.
She slowly adds the dry ingredients to the bowl.
Chef Tammy says, A LITTLE BIT OF DRY
AT A TIME.
THERE'S GOING TO BE SOME COCOA
FLOATING THROUGH THE AIR.
[Chef Tammy laughing]
Akeylah waves away cocoa billowing out of the mixer.
[Akeylah laughing]
Chef Tammy turns the mixer off.
Chef Tammy says, AND THAT'S IT.
She scoops the thick mixture out of the mixing bowl with a spatula and dumps it into a baking pan lined with parchment paper.
Chef Tammy says, AND THEN, BECAUSE
IT'S SO THICK,
YOU'RE NOT JUST GONNA POUR IT
ALL OUT INTO ONE SPOT.
Akeylah says, YOU’RE GONNA GLOB IT ON THERE.
Chef Tammy says, YEAH, WE'RE GONNA
GLOB IT.
She spreads the mixture evenly across the pan with an offset spatula.
Akeylah narrates, CHEF TAMMY HAD ME SPREAD
OUT THE GLOBS
AND TOPPED WITH WHITE
CHOCOLATE CHIPS.
Akeylah sprinkles white chocolate chips across the smoothed-out mixture.
Chef Tammy says, DON'T BE SHY
WITH THEM.
[Bright music plays]
Title: Trading Skills.
In the kitchen, Athena stands beside Chef Tammy.
Chef Tammy says, SO NOW, WE'RE GONNA PAINT
OUR CHOCOLATE.
[French accordion music plays]
Akeylah wears a beret and holds a paint palette and brush.
Akeylah says, WHAT?
TOO MUCH?
She stands at the table with Athena, Chef Tammy and their set bars of chocolate.
Chef Tammy says, BEFORE WE PAINT
ANYTHING,
WE'RE GONNA TAKE THEM OUT
OF THEIR MOLDS FIRST.
BUT YOU HAVE TO BE
CAREFUL, OKAY?
Chef Tammy carefully flips her moulds over, and the chocolate bars drop out.
Chef Tammy says, AND THEY SHOULD JUST
DROP RIGHT OUT.
SO YOU'VE GOT ONE SIDE
THAT'S FINISHED
WITH THE STUFF THAT
YOU'VE DONE,
AND THE OTHER SIDE THAT IS
JUST WAITING TO BE PAINTED.
Akeylah and Athena slowly start to flip their moulds.
Chef Tammy says, GENTLE, GENTLE.
The chocolate falls out of the moulds.
Akeylah says, WHOA!
Chef Tammy asks, DO YOU KNOW WHAT WE'RE
GONNA BE PAINTING WITH?
Akeylah guesses, CHOCOLATE PAINT?
Chef Tammy says, KIND OF.
IT'S CALLED COCOA BUTTER.
AND THESE ARE MY COLORS.
She uncovers two large containers full of small pots of different coloured cocoa butter.
Together, Akeylah and Athena say, WHOA!
Akeylah paints one of her chocolate bars with pink cocoa butter. Athena paints with purple cocoa butter.
Athena asks, WHAT ARE YOU DOING
FOR YOURS?
Akeylah says, I'M GONNA OUTLINE MY
LETTERS IN PINK.
WHAT ARE YOU DOING
FOR YOURS?
Athena says, I DON'T KNOW.
I'M JUST GOING WITH
THE FLOW.
In a timelapse, Akeylah and Athena finish painting their chocolate bars. Athena adds blue cocoa butter to her bars. Swirls on Akeylah’s bars spell out Love.
Akeylah says, AND DONE.
HERE'S MINE.
She holds up one of her bars.
Athena says, NICE.
HERE'S MINE.
She holds up one of her bars.
Athena asks, WOULD YOU LIKE TO
TRY A BITE?
Akeylah says, SURE.
WANNA TRY MINE?
Athena says, YEAH!
She and Akeylah share pieces of their chocolate bars.
Akeylah says, HERE YOU GO.
Athena says, THANK YOU.
Akeylah and Athena try the chocolate.
[Chocolate snapping]
Akeylah says, MMM!
Athena says, MMM!
Akeylah says, TEN OUT OF TEN SNAP AND A
GREAT FLAVOUR PROFILE.
Athena says, MMM.
TEN OUT OF TEN ON
THE YUMMY SCALE.
[Akeylah giggling]
Elsewhere in the kitchen, Chef Tammy spreads melted chocolate across the now-baked brownies. She carries the brownies over to Akeylah and Athena on a tray.
Chef Tammy says, AND DON'T FORGET ABOUT
THE BROWNIES.
Akeylah says, HOW COULD I?
Chef Tammy cuts small brownie slices. Chef Tammy, Akeylah and Athena each hold up a slice.
They all say, TO CHOCOLATE!
They bite into the brownies.
Akeylah says, MMM!
[Bright music plays]
Title: Trading Skills.
[Gentle music plays]
In the Skills Space, Akeylah places a tray of brownies on the worktable in front of Brody.
Akeylah says, ONCE I GOT THE MISE EN
PLACE RIGHT,
EVERYTHING FELL
INTO PLACE.
Brody says, WOW, THESE BROWNIES ARE SO
IMPRESSIVE, AKEYLAH!
OR SHOULD I SAY, CHEF?
Akeylah says, MAYBE ONE DAY.
She turns away from the table.
Akeylah says, THANKS FOR ACCOMPANYING ME
ON MY JOURNEY
INTO THE TREATS OF
THE TRADE.
Brody says, JOIN US NEXT TIME AS WE
TRADE PLACES
AND DIVE INTO ANOTHER
SWEET SKILL.
Akeylah says, IT JUST MIGHT BE THE SKILL TRADE
THAT TAKES YOU TO THE TOP.
Brody and Akeylah wave.
Together, they say, BYE!
They eat a brownie.

WHICH IS THE OJIBWE WORD
FOR WILD RICE.
AND THEN THIS ONE IS MADE FROM
ELDERFLOWER AND ELDERBERRY.
Akeylah says, AND I HAVE TO KNOW, HOW DID
YOU BECOME A PASTRY CHEF?
Chef Tammy says, WHEN I WAS VERY YOUNG,
I USED TO ENJOY HELPING MY
MOM IN THE KITCHEN.
AND WHEN I WAS GROWING UP, I
HAD SOME JOBS IN KITCHENS,
AND I MADE EVERYBODY'S
WEDDING CAKES
AND BIRTHDAY CAKES AND
ANNIVERSARY CAKES.
AND THEN DECIDED WHEN I WAS
IN MY 40S THAT I WANTED TO
ACTUALLY HAVE FUN AND ENJOY
WHAT I WAS DOING.
SO I WENT BACK TO SCHOOL, AND I
TOOK BAKING AND PASTRY ARTS.
Akeylah asks, WHAT IS THE MOST EXCITING THING
ABOUT BEING A PASTRY CHEF?
Chef Tammy says, I LIKE EVERYTHING THAT I
GET TO CREATE.
IF SOMETHING COMES INTO MY
MIND, I CAN CREATE IT.
I JUST LOVE EVERYTHING
THAT I DO.
AND I LOVE TO FEED PEOPLE.
I LIKE TO MAKE PEOPLE HAPPY.
Akeylah says, YOU KNOW WHAT WOULD MAKE
ME HAPPY?
A BITE OF THIS BONBON.
Akeylah bites into the elderflower and elderberry bonbon.
[Chef Tammy chuckling]
Akeylah smiles.
She says, TRÉS BONBON.
[Akeylah and Chef Tammy laughing]

[Bright music plays]
Title: Trading Skills.
[Gentle music plays]
In Raven Rising, Akeylah says, TODAY, WE'VE LEARNED A LOT.
A BIT OF MATH AND SCIENCE HERE,
A BIT OF ART THERE.
THE ONLY THING THAT'S MISSING IS
HISTORY.
LET'S SEE WHAT WE CAN LEARN
ABOUT THE PASTRY CHEFS
OF THE PAST AND HOW THEY'VE
SHAPED THE TREATS OF TODAY.
In a black-and-white video, Brody works in a kitchen wearing an apron and beret. He pretends to mix ingredients in a bowl with his hands.
Akeylah narrates, THE FIRST PUFF PASTRY MAY HAVE
BEEN A MISTAKE IN 1645
BY A FRENCH APPRENTICE TRYING TO
BAKE A CAKE.
As the French apprentice, Brody frowns.
Akeylah narrates, INSTEAD, SOMETHING MORE DELICATE
WAS BORN.
Brody takes a croissant out of the mixing bowl and smiles.
Akeylah narrates, IN THE 1800S, THE FIRST FRENCH
PASTRY MASTERS
OPENED PATISSERIES,
SHOPS WHERE FOLKS WOULD FLOCK TO
EXPERIENCE SWEET CREATIONS.
On a street, Brody hands out pastries. In a factory, he squeezes dollops of chocolate across a baking tray with a piping bag.
Akeylah narrates, IN THE EARLY 20TH CENTURY, SMALL
BAKERIES
AND CHOCOLATE SHOPS BECAME BIG
BUSINESSES.
LAURA SECORD OPENED AS A SMALL
CHOCOLATE SHOP IN TORONTO
AND SOON OPENED BIG FACTORIES
ACROSS THE COUNTRY.
[Cheerful music plays]
In a chocolate store, Brody takes off his beret.
Akeylah narrates, NOWADAYS, THE DEMAND FOR LOCAL
INGREDIENTS
FROM INDEPENDENT SHOPS
MAKE IT POSSIBLE FOR PATISSIERS
TO EXPERIMENT,
JUST LIKE THE FIRST ONES DID.
Brody puts on a chef’s hat and mixes ingredients in a bowl with a wooden spoon. Brody puts the bowl and spoon down and gives two thumbs up.
[Upbeat music plays]
In the kitchen, Akeylah narrates, WHILE WE WAITED FOR OUR BARS
TO SET,
I GOT A MUCH-NEEDED LESSON IN
BROWNIE BAKING.
Akeylah walks up to the table with Chef Tammy. Baking ingredients cover the table.
Chef Tammy says, SO ONE OF THE MOST IMPORTANT
THINGS THAT WE DO IN A KITCHEN
IS SOMETHING CALLED
MISE EN PLACE.
Akeylah says, MISE EN WHAT?
[Chef Tammy laughing]
Chef Tammy says, MISE EN PLACE.
A FANCY FRENCH WORD FOR
EVERYTHING IN ITS PLACE.
SO WHAT IT DOES IS IT ENSURES
THAT WE HAVE ENOUGH
OF EVERY INGREDIENT
BEFORE WE START BAKING.
Chef Tammy uses a kitchen scale.
She says, SO THAT IS A LOT
OF SUGAR.
She pours sugar into a mixing bowl on the scale.
Chef Tammy says, SALT.
SO THE SALT'S RIGHT
AT THE END.
Akeylah grabs a container of salt.
She says, GREY SEA SALT.
Chef Tammy says, TWO PINCHES.
She scoops salt into the mixing bowl.
Chef Tammy says, SO THEN WE'RE GOING
TO DO EGGS.
She cracks an egg into a plastic container on the scale. In a timelapse, Chef Tammy fills the container with cracked eggs.
[Whirring]
Akeylah cracks an egg into a container.
Chef Tammy says, MY RECIPE CALLS FOR 340 GRAMS
OF A.P. FLOUR
AND 8 GRAMS OF
BAKING POWDER.
Chef Tammy weighs flour and baking powder. Text reads, 340 grams equals 12 ounces. 8 grams equals 0.28 ounces.
Akeylah narrates, AND OF COURSE, COCOA POWDER.
She weighs cocoa powder.
Chef Tammy says, NOW I'M GOING TO START
WITH THE BUTTER.
She scraps butter into an electric stand mixer mixing bowl.
Chef Tammy says, THEN YOU CAN ADD ALL OF THE
SUGAR AND THE SALT.
She adds the sugar and salt.
Chef Tammy says, LIFT THE BOWL UP AND
YOU START SLOW.
Akeylah nods. Chef Tammy starts the mixer.
Chef Tammy says, IF YOU START THE MIXER FAST,
IT'S GOING TO GO...
[Chef Tammy and Akeylah imitating an explosion]
[Mixer whirring]
Chef Tammy and Akeylah look at the ingredients in the bowl.
Chef Tammy says, SO YOU SEE HOW BRIGHT
YELLOW IT IS?
AS YOU INCORPORATE AIR
INTO IT,
IT'S GOING TO
GET LIGHTER.
The bright yellow ingredients turn pale yellow.
Chef Tammy says, SEE IT'S TURNING COLOUR.
She slows down the speed of the mixer.
Chef Tammy says, THIS IS WHEN YOU'RE GOING TO
INCORPORATE THE DRY
AND THE EGGS TOGETHER.
She slowly adds the dry ingredients to the bowl.
Chef Tammy says, A LITTLE BIT OF DRY
AT A TIME.
THERE'S GOING TO BE SOME COCOA
FLOATING THROUGH THE AIR.
[Chef Tammy laughing]
Akeylah waves away cocoa billowing out of the mixer.
[Akeylah laughing]
Chef Tammy turns the mixer off.
Chef Tammy says, AND THAT'S IT.
She scoops the thick mixture out of the mixing bowl with a spatula and dumps it into a baking pan lined with parchment paper.
Chef Tammy says, AND THEN, BECAUSE
IT'S SO THICK,
YOU'RE NOT JUST GONNA POUR IT
ALL OUT INTO ONE SPOT.
Akeylah says, YOU’RE GONNA GLOB IT ON THERE.
Chef Tammy says, YEAH, WE'RE GONNA
GLOB IT.
She spreads the mixture evenly across the pan with an offset spatula.
Akeylah narrates, CHEF TAMMY HAD ME SPREAD
OUT THE GLOBS
AND TOPPED WITH WHITE
CHOCOLATE CHIPS.
Akeylah sprinkles white chocolate chips across the smoothed-out mixture.
Chef Tammy says, DON'T BE SHY
WITH THEM.
[Bright music plays]
Title: Trading Skills.
In the kitchen, Athena stands beside Chef Tammy.
Chef Tammy says, SO NOW, WE'RE GONNA PAINT
OUR CHOCOLATE.
[French accordion music plays]
Akeylah wears a beret and holds a paint palette and brush.
Akeylah says, WHAT?
TOO MUCH?
She stands at the table with Athena, Chef Tammy and their set bars of chocolate.
Chef Tammy says, BEFORE WE PAINT
ANYTHING,
WE'RE GONNA TAKE THEM OUT
OF THEIR MOLDS FIRST.
BUT YOU HAVE TO BE
CAREFUL, OKAY?
Chef Tammy carefully flips her moulds over, and the chocolate bars drop out.
Chef Tammy says, AND THEY SHOULD JUST
DROP RIGHT OUT.
SO YOU'VE GOT ONE SIDE
THAT'S FINISHED
WITH THE STUFF THAT
YOU'VE DONE,
AND THE OTHER SIDE THAT IS
JUST WAITING TO BE PAINTED.
Akeylah and Athena slowly start to flip their moulds.
Chef Tammy says, GENTLE, GENTLE.
The chocolate falls out of the moulds.
Akeylah says, WHOA!
Chef Tammy asks, DO YOU KNOW WHAT WE'RE
GONNA BE PAINTING WITH?
Akeylah guesses, CHOCOLATE PAINT?
Chef Tammy says, KIND OF.
IT'S CALLED COCOA BUTTER.
AND THESE ARE MY COLORS.
She uncovers two large containers full of small pots of different coloured cocoa butter.
Together, Akeylah and Athena say, WHOA!
Akeylah paints one of her chocolate bars with pink cocoa butter. Athena paints with purple cocoa butter.
Athena asks, WHAT ARE YOU DOING
FOR YOURS?
Akeylah says, I'M GONNA OUTLINE MY
LETTERS IN PINK.
WHAT ARE YOU DOING
FOR YOURS?
Athena says, I DON'T KNOW.
I'M JUST GOING WITH
THE FLOW.
In a timelapse, Akeylah and Athena finish painting their chocolate bars. Athena adds blue cocoa butter to her bars. Swirls on Akeylah’s bars spell out Love.
Akeylah says, AND DONE.
HERE'S MINE.
She holds up one of her bars.
Athena says, NICE.
HERE'S MINE.
She holds up one of her bars.
Athena asks, WOULD YOU LIKE TO
TRY A BITE?
Akeylah says, SURE.
WANNA TRY MINE?
Athena says, YEAH!
She and Akeylah share pieces of their chocolate bars.
Akeylah says, HERE YOU GO.
Athena says, THANK YOU.
Akeylah and Athena try the chocolate.
[Chocolate snapping]
Akeylah says, MMM!
Athena says, MMM!
Akeylah says, TEN OUT OF TEN SNAP AND A
GREAT FLAVOUR PROFILE.
Athena says, MMM.
TEN OUT OF TEN ON
THE YUMMY SCALE.
[Akeylah giggling]
Elsewhere in the kitchen, Chef Tammy spreads melted chocolate across the now-baked brownies. She carries the brownies over to Akeylah and Athena on a tray.
Chef Tammy says, AND DON'T FORGET ABOUT
THE BROWNIES.
Akeylah says, HOW COULD I?
Chef Tammy cuts small brownie slices. Chef Tammy, Akeylah and Athena each hold up a slice.
They all say, TO CHOCOLATE!
They bite into the brownies.
Akeylah says, MMM!
[Bright music plays]
Title: Trading Skills.
[Gentle music plays]
In the Skills Space, Akeylah places a tray of brownies on the worktable in front of Brody.
Akeylah says, ONCE I GOT THE MISE EN
PLACE RIGHT,
EVERYTHING FELL
INTO PLACE.
Brody says, WOW, THESE BROWNIES ARE SO
IMPRESSIVE, AKEYLAH!
OR SHOULD I SAY, CHEF?
Akeylah says, MAYBE ONE DAY.
She turns away from the table.
Akeylah says, THANKS FOR ACCOMPANYING ME
ON MY JOURNEY
INTO THE TREATS OF
THE TRADE.
Brody says, JOIN US NEXT TIME AS WE
TRADE PLACES
AND DIVE INTO ANOTHER
SWEET SKILL.
Akeylah says, IT JUST MIGHT BE THE SKILL TRADE
THAT TAKES YOU TO THE TOP.
Brody and Akeylah wave.
Together, they say, BYE!
They eat a brownie.
[Cheerful music continues]
