Brody says, WELL, WE'RE NOT EXACTLY PROTECTING OURSELVES FROM RAIN. NOT TRADITIONAL RAIN, ANYWAY.

Akeylah says, WE BUILT AN ICE CREAM MACHINE, BUT WE'RE A BIT CONCERNED ABOUT ITS MAIDEN VOYAGE.

Brody says, WISH US LUCK.

They tighten their ponchos around their faces and walk away from their work table.


[Splatting, sad trombone sound effect]

They walk back covered with ice cream.

Akeylah says, YOU KNOW, IT COULD HAVE BEEN WORSE.

Brody tastes ice cream from his poncho.

Brody says, TASTES PRETTY GOOD THOUGH. MAYBE WE SHOULD PUT OUR MACHINE ON STANDBY TO AVOID ANY OTHER ICE EXPLOSIONS.

[Anna clearing her throat, whooshing]

Anna says, LOOKS LIKE YOU GUYS MIGHT NEED TO FIND THE RIGHT PROCESS TO FIX AND OPERATE YOUR MACHINE. I JUST GOT OFF THE PHONE WITH A TRADESPERSON NAMED GREG. HE'S A FOOD PROCESS OPERATOR. HE USES AUTOMATED MACHINES TO HELP PROCESS FOOD. I BET HE CAN CLEAR ANY BRAIN FREEZE AND TURN YOUR ICE-MARES INTO SUNDAY DREAMS.

In a video clip, Greg Spence, a food process operator, wears a helmet and hearing protectors. He has a beard and moustache.

In the skill space, Brody says, SCORE!

Akeylah asks, WANNA HUG?

Anna says, ABSOLUTELY NOT.

[Whooshing]

Brody narrates, I WENT TO GET THE SCOOP ON FOOD PROCESS OPERATING AT CHAPMAN'S ICE CREAM IN MARKDALE, ONTARIO. I GOT SO CAUGHT UP IN OUR PROBLEM I FORGOT THIS IS A HUGE ICE CREAM FACTORY. SWEET!

Inside, Greg sits on a bench.

Brody says, GREG, PAGING GREG. GREG!

Greg says, HEY BRODY.

Brody says, OH, HI.

Greg says, NICE TO MEET YOU.

Brody says, NICE TO MEET YOU. SO, A FOOD PROCESS OPERATOR OPERATES THE FOOD PROCESS?

Greg says, WE OPERATE, MONITOR AND MAINTAIN ALL OF THE MACHINES THAT GO INTO MAKING THE FOOD.

[Spraying, whirring]

In the factory, someone sprays a red liquid on a device. A machine puts popsicle sticks in moulds.

Brody says, IN THIS CASE, ICE CREAM?

Greg says, ABSOLUTELY. FOLLOW ME.

Brody says, ALRIGHT, LET'S GO.

Later, Brody and Greg pose, wearing hard hats and face masks. Brody wears a laboratory coat over his clothes. They wash their hands at a row of sinks, and a metal door lifts.

Brody narrates, WE MADE OUR WAY TO THE PRODUCTION AREA, AND MY EYES SCREAMED FOR ICE CREAM.

[Spraying, whirring, Brody imitates an explosion, upbeat music continues]

A machine fills tubs with ice cream, and ice cream sandwiches move on a conveyor belt. Brody looks at the ice cream and moves his hands by the side of his head.

Brody asks, SO, WHAT'S FIRST?

Greg says, FIRST, OUR MIX IS BROUGHT THROUGH THIS CONTINUOUS FREEZER. AND LIKE ITS NAME, THE MIX IS CONTINUOUSLY MOVING THROUGH AS WE FREEZE IT, CONDITION IT, AND MONITOR IT ON ITS WAY TO THE PRODUCTION LINE.

[Whirring]

Greg and Brody stand by a computer display on the continuous freezer.

Brody asks, WHAT'S A MIX?

Greg replies, MIX IS THE DIFFERENT RECIPES THAT WE PREPARE BEFORE IT'S CONDITIONED WITH THE REFRIGERATION PROCESS.

Brody asks, HOW DO YOU MONITOR IT?

[Popping, whirring]

Greg points to the computer display, which is an H.M.I. monitor.

Greg replies, WELL, WE MONITOR IT ON THE H.M.I. WITH THE VALUES OF VISCOSITY, THE OVERRUN, AND FINALLY THE CREAM FLOW. THE VISCOSITY IS A MEASUREMENT OF HOW THICK THE MIX IS BECOMING AS IT MOVES THROUGH, AND DEPENDING ON WHAT IT READS TO ITS SET POINT, THE MACHINE WILL ADD MORE REFRIGERANT OR LESS REFRIGERANT TO MAKE SURE THAT THAT CONSISTENCY MAINTAINS. ONCE OUR VISCOSITY IS RIGHT, WE LOOK TO THE OVERRUN, WHICH IS A RATIO OF HOW MUCH AIR TO THE ICE CREAM WE ARE ADDING. IT CREATES A NICE, FLUFFY, AND A GOOD LOOK FOR OUR PRODUCTS.

Brody taps a pipe.

Brody asks, WHAT'S THIS PART OF THE MACHINE?

Greg replies, WELL, THESE ARE WHAT PUTS THE MIX INTO MOTION. WE HAVE TWO SETS OF INTERNAL GEAR PUMPS THAT MOVE THE MIX THROUGH THE FREEZER, AND ONCE IT COMES OUT AS CREAM, MOVES THE CREAM TO THE PRODUCTION LINE. THEY'RE GETTING READY TO SHUT DOWN SOON. WE CAN BRING THE PUMP TO THE SHOP AND SERVICE IT.

Brody says, LET'S GO!

[Whooshing]

In the workshop, Greg and Brody approach two pumps and tools on a table. Text reads, “Gear Pump.”

Greg says, WELL BRODY, THIS IS THE PUMP WE WERE JUST LOOKING AT ON THE CONTINUOUS FREEZER.

Brody asks, SO HOW DO WE GET THESE PUMPS PUMPING AGAIN?

Greg replies, WE REPLACE ALL OF THE O-RINGS. BECAUSE THEY ARE ALL FOOD CONTACT, AND WE WANT TO MAKE SURE THE FOOD STAYS CLEAN.
THE FIRST THING WE DO IS WE PUSH THE IMPELLER OUT OF THE BODY OF THE PUMP.

[Clinking]

Brody pushes the impeller out of the centre of the pump.

Greg says, AND ON THE IMPELLER, WE FIND OUR FIRST O-RING. WE'RE GONNA USE THIS PICK TO REMOVE THE O-RING.

Brody says, ALL RIGHT, SO LIKE.

Brody pushes an O-ring with the pick.

Greg says, ALMOST. AND SOMETIMES, THE LAST THING WE LEARN IS WHEN TO ASK FOR HELP.

Brody says, HELP.

Greg says, THERE WE GO. WE GET OUR NEW O-RING, AND OF COURSE, WE KEEP THE OLD ONE UNTIL WE VERIFIED THAT THIS O-RING IS THE RIGHT SIZE, THE RIGHT MATERIAL.

Brody says, ALL RIGHT, LET'S SEE IF YOU'RE THE SAME.

Brody holds the O-rings in front of his eyes.

Brody says, LOOKS THE SAME TO ME.

Greg says, PERFECT. SO, BEFORE WE INSTALL IT, WE NEED TO ADD A LUBRICANT. AND BECAUSE IT'S A FOOD FACILITY, WE USE FOOD-GRADE LUBRICANT. WE APPLY IT TO ALL MOVING PARTS TO EXTEND THEIR LIFE.

Brody asks, SO, WHAT DO WE DO WITH THE LUBRICANT?

Greg replies, WELL, WE PUT IT ONTO OUR HANDS AND THEN ONTO THE O-RING, MAKING SURE THAT THE O-RING IS COMPLETELY COVERED. PERFECT.

Brody squeezes lubricant onto the finger of his glove and applies it to the O-ring.

Greg says, YEP, ALL AROUND. THAT'S PERFECT. WE'RE GONNA PUT IT BACK ONTO THE IMPELLER.

Brody says, OKAY.

Brody pushes the O-ring onto the impeller.

Brody says, SO LIKE, IS THIS PROBABLY THE TIME I SHOULD ASK FOR HELP?

Greg says, ANY TIME IS A GOOD TIME.

Brody asks, CAN YOU HELP ME?

[Clicking, upbeat music continues]

Greg pushes the O-ring part of the way down the impeller, and Brody pushes it to the bottom.

Brody says, OKAY, SO NOW I JUST... OH, IT JUST FITS IN ON ITS OWN.

Greg says, WITH THE NEW O-RING AND THE FOOD GRADE LUBRICANT, WE CAN REINSTALL IT INTO OUR HOUSING.

Brody says, ALL RIGHT.

Greg says, THE CLEARANCES ARE TIGHT, SO WE WANT TO MAKE SURE WE'RE SQUARE WHEN INSTALLING.

[Quiet clanking]

Brody carefully pushes the impeller partway into the pump.

Brody asks, OKAY, SO LIKE THAT?

Greg says, THAT'S PERFECT. IT IS ALL VERY DIFFICULT.

Greg helps Brody push the impeller into the pump.

Brody says, IT LOOKS SO EASY.

Greg says, FOR SOME.

[Whooshing]

Brody narrates, WE TOOK A BREAK SO I COULD ASK GREG HOW HE SERVED UP SUCH A COOL JOB.

Brody asks, HOW DID YOU GET INTO THIS SWEET TRADE?

Greg replies, WELL, BRODY, I FOUND MYSELF ATTENDING UNIVERSITY WITHOUT THE DIRECTION OR THE MOTIVATION TO BE THERE, AND I THOUGHT OF THE TRADES AS SOMETHING I WOULD REALLY LIKE TO GET INTO.

Brody asks, WHAT DID YOU DO?

Greg replies, I STARTED BY GETTING INTO THE APPRENTICESHIP PROGRAM, WHICH IS THREE SEPARATE LEVELS. SO, YOU COMPLETE THE SCHOOLING AS WELL AS 2,000 HOURS FOR EACH LEVEL, WHICH ALLOWS YOU TO MOVE ON TO THE NEXT LEVEL. WHEN ALL THREE LEVELS ARE COMPLETE, YOU WRITE A C OF Q TEST, CERTIFICATE OF QUALIFICATION, AND SO LONG AS YOU PASS THAT, YOU BECOME RED SEAL QUALIFIED CANADA-WIDE.

Brody asks, WHAT DO YOU LOVE ABOUT YOUR TRADE?

Greg replies, WHAT I LOVE ABOUT BEING A FOOD PROCESS OPERATOR IS THE MANY INTERDISCIPLINARY STUDIES THAT YOU GET TO LEARN. WELDING, ELECTRICAL, P.L.C. PROGRAMMING AND WHEN YOU GET TO LEARN ALL OF THESE DIFFERENT STUDIES, YOU'RE ABLE TO GO FORTH AND HELP MAINTAIN AND SERVICE THE MACHINES THAT WE HAVE THAT HELP MAKE THE FOOD.

Brody says, THANKS, GREG AND NOW IT'S TIME FOR THE MOST IMPORTANT QUESTION. TIME FOR A TREAT?

Greg says, I THINK IT'S TIME.

Greg and Brody eat Chapman Super Frosty chocolatey-coated vanilla ice cream.

[Whooshing]

Greg says, YOU GOT A GOOD EYE FOR THIS BRODY, AND YOU'RE NOT WRONG. THIS MACHINE IS ONE OF OUR MOST INNOVATIVE. IN THE END, WHEN EVERYTHING IS TIMED AND POSITIONED WELL, IT'S A DELICATE DANCE THAT ALL WORKS TOGETHER. BUT SOMETIMES, THAT DANCE CAN BE INTERRUPTED.

Brody asks, WHO DARES TO INTERRUPT THIS DANCE?

Greg replies, THE MACHINE.

Brody says, OH, CARRY ON EVERYONE. WHAT HAPPENS IF IT'S NOT WORKING PROPERLY?

[Whirring, rattling]

Greg says, WHEN IT'S NOT WORKING PROPERLY, WE USE THE H.M.I. TO ADJUST THE CONTROLS WHERE WE NEED TO. SO, AXIS ONE IS THE WAFER PUSHER. AXIS TWO IS THE WHEEL THAT TURNS. AXIS THREE IS THE CONVEYOR THAT MOVES THEM. AXIS FOUR, FIVE, SIX, AND SEVEN ALL WORK TOGETHER BEHIND THE GUARDING TO WRAP THE SANDWICH.

Greg takes an ice cream sandwich off the conveyor belt.

Greg says, WHEN WE LOOK AT THE SANDWICH, THE WRAP LOOKS GOOD. IT LOOKS PROPERLY FOLDED. WE HAVE EVEN WRAP. KNOWING THE MACHINE AND KNOWING THE PRODUCT HELPS US KNOW WHAT ADJUSTMENTS TO MAKE AND WHEN.

[Whooshing]

Brody narrates, IN 1864, LOUIS PASTEUR INVENTED PASTEURIZATION, A WAY TO DESTROY ORGANISMS IN MILK SO IT COULD HAVE A LONGER SHELF LIFE. IN 1925, CLARENCE BIRDSEYE INVENTED THE DOUBLE BELT FREEZER, WHICH BIRTHED THE FROZEN FOODS INDUSTRY.

[Rock music plays]

Brody narrates, IN 1950, A HUGE COOKIE FACTORY OPENED IN TORONTO AND BECAME ONE OF THE BIGGEST FOOD PROCESSING FACILITIES IN NORTH AMERICA.

[Rumbling]

In the Chapman’s ice cream complex, a metal door lifts. Brody and Greg stand beside a tipped, disk-shaped metal mould taller than Greg.

Brody says, I KNOW THIS ONE... U.F.O.

[Rattling]

On a machine, juice moves through tubes into the mould.

Greg says, CLOSE. IT'S ACTUALLY OUR LOLLY JUICE MOULD TABLE, AND ONCE IT'S IN PLACE, THE UNDERSIDE WILL BE REFRIGERATED WHILE ON THE OTHER SIDE, IT GETS FILLED WITH THE JUICE.

[Rattling, splashing]

On the machine, juice squirts into the mould.

Brody asks, WHAT DO WE DO WITH IT?

Greg replies, WE WANT TO MAKE SURE THAT THE REFRIGERANT ON THIS SIDE DOESN'T MAKE IT TO THE OTHER SIDE WHERE THE LOLLY JUICE IS. SO WE'RE GOING TO DO A DYE TEST TO MAKE SURE THAT THERE'S NO HOLES ON IT.

Brody says, LET'S TEST.

Greg holds two spray cans.

Greg says, TO TEST, WE HAVE A PENETRANT AND A DEVELOPER. THE PENETRANT IS THINNER THAN WATER, SO IT'LL BE ABLE TO MOVE THROUGH THOSE SMALL HOLES, BUT ONLY ONCE WE APPLY THE DEVELOPER TO THE TOP SIDE.

Brody says, LET'S DO IT.

Greg says, ALL RIGHT, BUT FIRST MASK UP.

Brody says, ALL RIGHT.

Brody pulls a mask over his nose and mouth.

Greg says, PERFECT.

[Spraying]

Greg sprays the red liquid penetrant onto the mould.

Brody says, ROCKET RED.

Greg says, THAT'S RIGHT. RED SO WE CAN SEE IT.

[Spraying, upbeat music continues]

Brody sprays the penetrant on the mould.

Greg says, YOU'VE DONE A GREAT JOB WITH THE PENETRANT. NOW WE GOT TO TURN IT AROUND AND GET THE DEVELOPER ON THE OTHER SIDE.

Brody says, ALL RIGHT.

[Spraying]

They turn the mould, and Brody sprays the developer on the other side.

Greg explains, WHAT IT DOES IS IT HELPS DRAW THAT PENETRANT THROUGH THAT WE PUT ON THE OTHER SIDE. SO, IF THERE ARE ANY LITTLE HOLES, THE DRY PROPERTIES OF THE DEVELOPERS WILL DRAW THROUGH THE PENETRANT AND WE WILL SEE IT.

Brody says, ALL RIGHT, DID I PASS THE TEST?

Greg says, I THINK SO, IT LOOKS GOOD. IF THERE WAS ANY LEAKS, WE WOULD SEE THAT PENETRANT PULLING THROUGH.

Brody says, LOOKS LIKE THERE'S NOTHING HERE. YOU PASS.

Greg says, WE DON'T HAVE TO SEND IT TO THE WELDERS. ONCE IT GETS A WASH, WE CAN BRING IT RIGHT BACK OUT FOR PRODUCTION.

[Whirring, upbeat music continues]

Brody and Greg shake hands in front of the machine with the mould.

[Whooshing]

Brody puts a wrench on the work table.

Akeylah says, BRODY, YOUR DAY GETTING THE SCOOP ON THE TRADE OF FOOD PROCESS OPERATOR HAS ALLOWED US TO UNFREEZE THE PRODUCTION OF OUR ICE CUBE PROJECT.

Brody says, THAT'S RIGHT. DISCOVERING THE PROCESS OF FOOD OPERATING MEANS WE CAN OPERATE OUR FOOD PROCESS.

[Whooshing]

Akeylah says, I GUESS WE'RE READY.

[Whooshing]

Brody says, I GUESS WE ARE.

[Whooshing]

Akeylah says, WE CAN START IT UP.

Brody says, WE SURE CAN.

Akeylah says, AFTER YOU.

Brody says, AFTER YOU.

[Sizzling]

Akeylah and Brody walk away from the work table. They return, carrying a plate of ice cream with a sparkler on the top.

They say, IT WORKED!

Brody says, MAYBE FOOD PROCESS OPERATING WILL BE THE CHERRY ON YOUR TRADE SUNDAY.

Akeylah says, BUT EVEN IF IT ISN'T, THERE ARE TONNES OF OTHER TRADE FLAVOURS THAT COULD TAKE YOU TO THE TOP.

Both say, SEE YOU NEXT TIME!
